Things to Know Before Cooking Chinese Pea Shoots

In an effort to eat a more healthy diet, more people are turning to vegetables and looking for interesting ways to cook them. Chinese cooking has used pea pods and pea shoots as a staple for centuries, and Eastern-style cooking has developed greater traction in many western countries including the United States and Canada. Pea shoots, pea sprouts and baby spinach are quite similar in nutritional value and cooking properties and can be used almost interchangeably.

Step 1

Combine the broth, soy sauce, sugar and wine in a large bowl and mix vigorously. Set the bowl aside.

Step 2

Pour 2 tablespoons of oil in your wok and turn up the heat to medium. Add the garlic to the oil for about 15 to 45 seconds. Add the broth and soy sauce combination.

Step 3

Place the pea shoots in the wok and turn the heat to high. Toss the vegetables and cook for about 30 seconds. Turn down the heat and cover. Cook for about three minutes and serve.
