7 Things to Know Before Broiling New York Sirloin in Oven


A good steak and a nice glass of red wine combine to make a classic romantic dinner. The New York sirloin is a lean and juicy cut of beef that is cut from the top of a T-bone steak. There is little to no fat on a sirloin steak, and it falls between the pricey and inexpensive range. Sirloin steak often is cooked quickly at a high heat under the broiler, which is inside the oven or just underneath the oven in its own compartment.
The Basics
Step 1
Bring the steak to room temperature for 10 to 15 minutes before cooking.
Step 2
Preheat a broiler 10 minutes before adding the meat to the oven.
Step 3
Place a cast-iron skillet in the broiler to heat up.
Step 4
Rub the steak with olive oil, kosher salt and freshly ground black pepper.
Step 5
Remove the skillet from the broiler. Be very careful and use oven mitts because the skillet will be extremely hot. Place the steak in the skillet and sear for three minutes on both sides.
Step 6
Cook the steak in a cast-iron skillet that is placed 6 inches from the heat source. Steak cooking times are very specific, and waiting just one minute too long could be the difference between a medium-rare and well-done steak. For a steak that is 1-inch thick, cook for one minute for a rare steak, two to three minutes for a medium steak and four to five for a medium-well steak. For a steak that is 1-¼ inches thick, add one minute to those times. For example, a 1-¼-inch steak should cook six to seven minutes for medium-well. Add another minute cooking time for a 1-¾-inch steak.
Step 7
Remove the steak from the heat source and let it sit for five minutes before eating.

Tips and Warnings
Marinate the steak the night before in a mixture of red wine, red wine vinegar, chopped garlic, rosemary, salt and pepper to tenderize the meat and add intense flavor.
Always wash your hands well after handling raw meat.
